Gluten Free Blackberry Torte

Not only is it Great British Bake Off day, but it is gluten free week!!

How perfect for us, as our bars are packed with gluten free oats, real fruit and deliciously tasty coconut oil. Our mixed berry bar also contains the fruit of the season, blackberries. Our moist mixed berry bars have real blackberry juice inside them , giving them a lip-smackingly indulgent taste.

So what is the best way to celebrate gluten free week you ask? Well we decided to create a Get Fruity inspirited indulgent blackberry torte recipe.

What you will need: 

250g Soft unsalted butter, plus extra for greasing

365g light brown muscovado sugar

300g 70% dark chocolate, broken into pieces

85g cocoa powder

6 large free range eggs, lightly whisked

Method

1 tsp vanilla extract

1 heaped teaspoon of sea salt

190g blackberries, to serve

1. Preheat the oven to 180 C, gas mark 4. Grease and line the sides and bottom of a 20cm loose- bottomed cake tin.

2. Gently melt the butter and chocolate in a large bowl over a pan of simmering water. Remove from the heat and stir to combine. Add sugar, gently whisk until there are no lumps, then fold in the cocoa powder. Gradually add the eggs, vanilla and salt, giving it a good stir.

3. Pour batter into the prepared tin and bake in the oven for 35 minutes. Remove and leave to cool completely.

4. Top with the fresh blackberries. Serve and enjoy the fruity chocolate treat!
