Totally Coconuts for a fruity recipe!

Our little fruit pack has come up with a fabulously fruity recipe for you all to try at home. The cheeky little fruity gang have used a totally coconut cream mixed with one of our Get Fruity bars, the result is coconut heaven on a spoon!

Our little fruit pack has come up with a fabulously fruity recipe for you all to try at home. The cheeky little fruity gang have used a totally coconut cream mixed with one of our Get Fruity bars, the result is coconut heaven on a spoon!

As it is coconut week in the great fruity headquarters, we decided to try and use  virgin coconut oil in all our recipes this week. This particular recipe is one of our favourites and is so easy to make.

FACT! you can use coconut oil to take your makeup off, hydrate your skin & hair and even brush your teeth with it

Ingredients needed:

4 Strawberry Get Fruity bars (you can use any flavour you like, we think they are all delicious)

Three heaped teaspoons of Virgin Coconut oil (Organic is always good, if you can get hold of it)

Three drops of vanilla extract

Cream cheese (super light)

Whole strawberries to garnish

Equipment:

Ramekin or cheesecake dish

Cling film

Mix together the 250g of cream cheese with the three drops of vanilla extract. Vanilla pods are even better if you can get hold of them. The sweetness from the vanilla means you will not need to add any refined sugars.

Melt three heaped teaspoons of virgin coconut oil in a small saucepan then slowly combine the coconut oil into the cream cheese. Once fully mixed pop this in the fridge to cool.

Get Fruity coconut oil

Crumple your 4 get fruity bars up to a fine crumb. we used some left over ramekins to make our cheese cakes in but you can easily use a normal cheesecake dish. Line your ramekin with cling film. Firmly push the Get Fruity crumb base into the bottom of the ramekin base, do this until just under half of the ramekin is get fruit bar. This has to be done firmly to make sure that the cheesecake base stays in place when set.

Once the base is firmly pushed in to all 4 ramekin bases, fill the remaking space with the coconut vanilla cream cheese. Leave these to set in the fridge for 2 hours so set. Add a little dust of icing sugar if you are feeling particularly naughty and finish with a super juicy whole strawberry!
